Masumasu Masuda is located inside a traditional Kyoto machiya in Nishijin.
The building itself has a connection to the history of the neighborhood.
Before becoming our restaurant, this machiya was once used as a kimono shop.
Nishijin has long been associated with Kyoto’s textile and kimono culture, and we feel a special connection to continuing the life of this historic building in a new form.
Today, instead of textiles, we work with food.
Our chef prepares a monthly changing omakase course based on the ingredients and culinary culture of each season.
Our omakase course changes every month.
We carefully select seasonal ingredients from Kyoto, Tochigi, and other parts of Japan, choosing ingredients that are at their best at that particular time of year.
The course is designed as a complete experience rather than simply a collection of individual dishes.
We consider the balance of flavors, textures, colors, temperature, vessels, presentation, and the progression of the meal.
Vegetables are also an important part of our cuisine.
We want guests to enjoy a satisfying meal without feeling excessively heavy afterward.
Japanese dashi is another important element of our cooking.
We prepare different types of dashi according to the ingredients and the dish, rather than relying on one fixed approach.
