Vegetarian Dining in Kyoto
We often receive inquiries from international guests asking whether we can prepare a vegetarian kaiseki course.
The answer depends on your dietary preferences, especially regarding dashi (Japanese soup stock), which is the foundation of traditional Japanese cuisine.
Traditional Japanese Dashi
Most Japanese dishes are made with awase dashi, a broth prepared from kombu (kelp) and katsuobushi (bonito flakes).
Even dishes that appear to contain only vegetables often include this traditional dashi.
For this reason, some meals that may seem vegetarian are not considered vegetarian by all dietary standards.
If Bonito-Based Dashi Is Acceptable
If you are a vegetarian who is comfortable consuming bonito-based dashi, we may be able to accommodate your request.
Please let us know your dietary preferences and any ingredients you do not eat when making your reservation.
We will do our best to prepare a suitable seasonal omakase course.
If You Require a Completely Bonito-Free Dashi
If you prefer a vegetarian course made without bonito flakes, please contact us before making your reservation.
Preparing a completely separate vegetarian dashi and menu requires special planning and preparation.
For this reason, we are generally able to offer a fully bonito-free vegetarian course only when the restaurant is reserved as a private booking for six or more guests, and everyone in the group will enjoy the same vegetarian menu.
This allows us to prepare every dish consistently while maintaining the quality of the kaiseki experience.
Every Vegetarian Diet Is Different
Vegetarian diets vary from person to person.
For example, some guests:
●Eat bonito-based dashi
●Do not eat seafood
●Eat eggs
●Consume dairy products
If you let us know your dietary requirements in advance, we will carefully review them and do our best to accommodate your needs whenever possible.
